Here at WeRChristmas HQ we love all things quick easy and simple, nobody wants to spend hours in the kitchen when there are festive memories to be made.

Crispy Chicken Pops

  • 2 Chicken Thighs
  • 1tsp onion powder
  • 1tbsp garlic powder
  • 1 tsp black pepper
  • 1tsp cayenne pepper
  • 2 tsp celery seeds
  • 250g plain flour
  • 1tsp salt
  • 100ml butter milk

Mix all dry ingredients in a bowl. Slice the Chicken into chunks and toss into the dry mixture. Carefully remove and dip into the buttermilk. Pop the chicken back into the dry mixture for a second coating, coat well and don’t worry about it being uneven as this makes it crispier.

Place the chicken into a deep fat fryer or a wok shallowly filled with oil. Cook the chicken at 170c until golden brown and cooked thoroughly. Serve on a bed of salad with some tasty mustard mayo.

Cauliflower Cheese Rolls

  • 1 Cauliflower
  • 100ml milk
  • 1tbsp plain flour
  • 80g plus 1 tbsp butter
  • 25g grated cheddar
  • 25g Parmesan
  • 10 sheets of filo pastry
  • ½ tsp sesame seeds
  • 1tsp garlic granules

Finely chop or blitz your cauliflower so it looks like rice. Pop into a microwaveable bowl and cook for 5 minutes or until soft stirring halfway.

Pour your milk into a saucepan with 1tbsp of butter and plain flour. Whisk together and bring to the boil slowly, mixing all the time, until smooth and thick.

Stir in the cooked cauliflower, cheddar and Parmesan. Season well and add garlic granules. Leave to cool then transfer to a piping bag or food bag.

Turn your oven to 200c and leave to preheat. Place some baking paper on your tray then unfold the pastry sheets.

Melt the rest of the butter then lightly brush the pastry. Spread or pipe your cauliflower mixture onto the pastry then roll up like a sausage. Brush the tops with remaining butter and tip with sesame seeds.

Bake 15-18 minutes until golden and crisp. Serve warm!
